The energetic vibe in part derived from the highly-rated California Polytechnic along with a climate producing an unparalleled year-round variety of produce and vines just adds to the allure. Since 2011 Matthews Hospitality had called San Luis Obispo home.
With the partnership of experienced local developers and the expertise of successful hoteliers, Cerro Hotels & Resorts was founded with a goal to create a new benchmark in affordable luxury. This vibrant hospitality company is committed to a fresh contemporary approach in developing and operating distinctive properties for today’s savvy travelers.
Beginning with Hotel Cerro in the heart of downtown, innovative and authentic guest experiences are delivered by intuitive design and attentive service to delight and surprise throughout.
Combining contemporary design and a style of a boutique hotel with the service and excellence associated with luxury brands. Hotel Cerro appeals to a broad audience; active; families; romantic couples; friends on a spa getaway, as well as business travelers and local area residents.
The 95,000 square foot project, designed towards LEED Silver environmental guidelines, combines high-end retail, 8 luxury residences, a boutique hotel consisting of 65 rooms and suites, brasserie-style restaurant, gym, rooftop pool & bar, versatile meetings spaces, full-service spa and valet parking.
Authentically natural and innovatively urban, Hotel Cerro captures a downtown, Central Coast casual sensibility.
Hotel Cerro opened for business in January 2020.
Rancho Valencia: An Auberge Resort

Resort Management through an ownership transition.
Engaged by Auberge Resorts to manage the continuation and redevelopment of this classic Southern California resort through the transition of new ownership. On 40 lush acres of prime real estate in prestigious Rancho Santa Fe, Rancho Valencia comprises of 52 luxury Casitas and a residential association of 96 fractional Villa ownerships.
Management of a private health and fitness club with an 18 court tennis facility, 10,000 square foot spa with state-of-the-art fitness facilities and multiple
banquet and meeting rooms.
Re-conceptualizing the hotel restaurant to engage the local market formed an
integral part of this role.
Coordinating all principle elements for the resort redesign; architects, ownership, operating company and project management were also vital to this multifaceted mission.

Revisit to one of the Matthews' original concepts for on-site operational consulting.
By 2007, Necker Island had been in operation for more than twenty years and had become a victim of its own success. The Matthews Hospitality consultation addressed the following issues: Labour relations, Operating systems, Interior design, Repairs and maintenance, Project management of new dock installation, helicopter landing pad, and two tennis courts. Environmental impact study and a feasibility study on the acquisition of a neighbouring resort.

Concept development and operational planning of Windermere Island, a private island off of Eleuthera, the Bahamas.
This development comprised the northern half of the exclusive 160 acres Windermere Island and consisted of 36 villas and 40 home-sites. Matthews Hospitality involvement brought the planning of this development to a highly developed stage including concept, human resources, financial planning, including fixtures fittings and equipment (FF & E) budgeting, 1st and 5-year operating projections, and pre-opening costs, marketing planning, and systems planning.

Hospitality master planning of 1000 acre private island in the Exuma Islands Chain of the Bahamas.
The nucleus of this development was a 40-room Amanresort complemented by 40 Aman villas serviced by the resort, and a very limited number of private home sites. The Matthews’ previous experience working with Amanresorts enabled the effective development co-ordination as owners’ representatives, integrating Amanresorts head office in Singapore, the architect's office in Kuala Lumpur, Malaysia, whilst being based in South Beach, Miami.
Maui Land & Pineapple Company

Revitalizing and rejuvenation of 1970's master-planned resort.
Kapalua was originally master-planned over an area of 1600 acres within a larger protected environment of 26,000 acres, with three world-class golf courses, a Ritz-Carlton hotel, a 200-room luxury hotel, rental homes and villas and several food/beverage outlets. The resort needed an injection of fresh initiatives to bring it into the 21st century:
Matthews Hospitality joined a team of contemporaries in contributing to this
Master Plan revitalization.
Kapalua Bay Hotel required a complete redevelopment, reducing 200 rooms to create a series of 60 residences. The conceptualization of a holistic wellness experience as well as the design and implementation of a coastal and mountain trail network.
Two restaurants required re-launching as well as the conception and integration of a higher level of service standards and physical amenities for the villa rental program.


Timber Hill
Sonoma County, California | USA
Brand expansion of Twin Farms through the development of a sister property on the west coast of the United States.
Initial emphasis was placed upon the procurement of the required entitlements and permits in an area renowned for its strict environmental controls and multi-layered bureaucracy.
The development centered around a lodge of striking architectural design, surrounded by twenty individual guest cottages with interior design by the renowned New York designer Thad Hayes. Designs were completed for the operation to include a full spa, fitness facility, swimming pool, varied recreation activities and a very strong food and beverage element drawing on the abundance of high-quality produce and boutique wineries of Sonoma County. All operational planning was completed from forecast operating through marketing planning, systems and policies.
